The production of this product began at the request of Norther Monk brewery based in Leeds who were looking for a specialist smoked malt for a Patrons Project beer beer.
In house we take one of our most popular Pale Ale Malts, this is then cold smoked for 2-3 days over sawdust which we produce by sanding the staves from whisky barrels into dust. Availability of this product is very limited due to the time to produce and availability of the whisky barrels. This imparts a light to medium level of smoke to the malt.
This Pale Ale malt is fully modified and is easily converted by a single-temperature mash. This is the preferred malt for ales of all types. This malt is interchangeable with British pale ale malt and produces a slightly darker and a more bready, malty flavour.
