Description
Aframomum melegueta is a species in the ginger family, Zingiberaceae, and closely related to cardamom.
Grains of Paradise, from Africa are prized for their taste which is similar to black pepper, but they have many floral attributes and aromas. Complex flavour is that of pepper, coriander, ginger & cardamom with a hint of citrus. Milder than black pepper but still pack a kick if added in copious amounts. Add to curries, tagines & stews, paellas, cakes & cookies, breads, sauces & much more. They can be added whole or grind as and when required.
It is commonly known as grains of paradise, melegueta pepper, alligator pepper, Guinea grains, ossame, or fom wisa.
Used in some witt beers, and also in the production of gin as a botanical.
