STYLE: OATMEAL STOUT
This beer makes a return every Autumn around that spooky time of year! It’s a very approachable Stout that doesn’t hold those strong roasty notes, but more velvety chocolate. We set out to make a creamy, full bodied Oatmeal stout with Chocolate notes and we’re very happy with this batch!
There have been a few changes to this years Chasing Shadows brew. We have had to change our yeast selection quite a few times on our Stouts over the years as we’ve never really been that happy. We wanted yeast with the right attenuation for that touch of sweetness, but we also wanted some complimentary esters. This year we have rolled with ‘Verdant IPA’ yeast. It attenuates a little higher than we would typically want but we were after the creamy esters and the fullness it lends to the stout. Carafa 3 wasn’t added to the mash this time as we didn’t want to pick up too much character, we were only after the deep back colour and very gentle roast notes. The chocolate malt addition makes up 10% of the grist and this is what gives the beer most of that wonderful character. We have brewed the beer to cask style along with cask levels of carbonation as those attributes work wonders with a Stout. No one wants a overly spritzy Stout do they!?

YEAST: VERDANT IPA
PROFILE: MEDIUM TO FULL BODIED, CHOCOLATE, CREAMY
