Cashmere seems to be one of those hops that goes under the radar. I personally haven’t seen it being used that much by other breweries and I cant think of a reason why. It gives off an amazing aroma and has decent oil content, it’s not in crazy demand so it’s easily accessible and lastly its well priced in comparison to the big boys (Citra, Idaho 7, Simcoe etc). Both me and Freddie really enjoy this hop and its definitely got us scratching our heads for why we shouldn’t be dropping a small amount of Cashmere into every beer!
Cashmere brings bags and bags to the party. It gives off such a complex aroma that seems to contain Peach, Vanilla, Lemon, and tangerine notes that blend in lovely with a medley of floral notes. The dry hop for this IPA is 57% Cashmere and the rest of the beer is backed up with Citra. As you can probably imagine, this is dream team stuff! We’ve gone for a lower carbonation on this batch for a better mouthfeel and we are super happy with the results!
