Description

Released in 2012 by the Hop Breeding Company, LLC, Mosaic hops feature complex but clean flavour characteristics and are known for their triple-use profile encompassing bittering, flavour and aroma. They have high alpha acids but low cohumulone which makes them pleasantly hoppy, carrying flavours of mango, pine, citrus and herbs and aromas of tropical and stone fruit. Mosaic is the first daughter of Simcoe and Nugget as has been humorously referred to by some as “Citra on steroids”.

    Over the years I’ve tried various hop extract products for adding to the beer as it goes into the keg. None have been all that successful, at least to my taste. This new product looked interesting and worth trying. I ordered a sachet of the Mosaic variety.

    The instructions on the BarthHaas video and the usage sheet are clearly intended for commercial brewers. But easily transferrable to small scale home brewers.

    Replacing whole hops in the secondary fermentation was not my intention. Using the product in the keg was the aim. 0.05-0.1 g/litre is recommended. Going for the middle of the range I added 1.5g to 20 litres of finished beer.

    The stuff comes in a sachet, which is a bit inconvenient. I took 1.5g using a 2ml syringe to suck the stuff out, having warmed the sachet by dropping it into a glass with some water at about 40C. The 1.5g in the syringe was then dispersed in a small amount of warm water before being poured into the beer in the keg after auxiliary and Isinglass finings had been added.

    The beer was then moved into my beer cupboard at 12C.

    For the first couple of days I thought I’d ruined the beer. It tasted harsh and the hop flavour was overpowering. But, after about 3 days, things calmed down. The beer came into condition and the hop flavour and aroma really came through. The beer is now really tasty. the hop aroma is astounding, as is the hop flavour. Better than any dry hopping I’ve ever done.

    One concern, though, is the packaging. To get the 1.5g out of the sachet I cut the top off. Then clipped it shut before putting it in the ‘fridge. It’s looking a bit messy and I’m not sure how easy it will be to get the next syringe full out. A bottle with a screw cap would work better for me.

    Tomorrow another brew will be started. Less of the Mosaic Spectrum will be used in the keg. Possibly the bottom end of the recommendation, 0.05g/L.

    This is now an essential addition to my ingredients. Not right for every beer, but perfect for others. Next MM order will include other varieties.

    This stuff has given me what I’ve been seeking for years. A finished beer with pronounced hop aroma and flavour. I love it! And it’s so easy to use.

    Leaving the packaging concern aside, though, this stuff is well worth trying when you want to brew a hoppy beer. Highly recommended.
