Beautiful peat-smoked malt. If you like whisky from Islay or Lapsang Souchong tea you should try brewing with this.
I had tried the only peat-smoked beer I could find commercially available and quite liked it, so I was aiming to create something similar. I couldn’t get any particularly helpful information about proportion so threw caution to the wind ending up with a recipe using 45% of this peat smoked malt, with the remainder being mainly pale malt and some rye malt. I figured it might be a total disaster (all the information I could find online was suggesting 5-10% max of the smoked malt), but it was worth a go to get an idea on where to go with a second attempt if it was too smoky.
There was a very strong smoke aroma while brewing, which had me a bit worried, but that reduced and softened through fermentation. After a month in bottles there is a distinctive and lovely smoky note to the beer, not overpowering at all. I used minimal hops so as not to compete with the smokiness and I think that was a good plan.
Definitely going to brew with this again at around the same proportions. Top malt.
