Unity Brewing Co – Quorum Brune
Unity is a 6-barrel brewery based in Southampton, with a focus on elevating humble ingredients to create modern, Belgian-influenced beers and hazy IPA’s. Their approach is founded on a creative ethos and a spirit of collectivism, where people come first. Founder Jimmy Hatherley formerly worked at London Fields brewery and the Earl of Essex brew pub in London and developed a flair for producing nuanced and flavoursome beers across a wide range of styles.
Quorum is Unity’s nod to the classic brown abbey ales of Belgium, which gives a lift to the rich malt character and complex aromatics of the style. The recipe starts off very traditional but the infusion of toasted cacao nibs in the mash give a warming richness and the green cardamom in the boil add an almost cola-like aromatic, all combining to create a very drinkable brown ale that’s wonderfully fresh but also ages well in the bottle, allowing the flavours to develop and meld together.
NOTE: This recipe also requires 5g of green cardamom pods crushed, which are not included in this kit.
Every effort is made to match the brewery recipe precisely, but at times it maybe necessary to change some of the listed ingredients on the recipe to alternatives due to seasonality or availability, but in all cases we do our best replace with something that won’t impact on the overall taste and flavour of the beer.
