Having tried a horindahl and thought it to be a little too fruity(yeasty pineapple) I wanted a cleaner kweik strain.
This UBBE was pitched 31st December 2020 and maintained at 28’c for 5 days then 32’c for 2 days to push it. I then put it in the garage to help yeast floculate. 2 days and very very clear, much more so than my normal safale05, so should say high flocking. Taste is great, very clean and ale like with no weird fruity note, after a few more days in keg will be even better. Crazy fast fermentation staring and fast to drink 9 days but could be quicker at higher temps.
