Wishbone – Drover
Wishbone brewery is a 10-barrel microbrewery, based in the heart of Yorkshire between Wuthering Heights and the Yorkshire Dales. From their modern brewery in a former textiles mill, they produce flavoursome brews across a wide range of styles. Husband and wife team, Adrian and Emma Chapman, signed the lease on their 5000 sq ft premises in December 2014. Adrian, a multi-award- winning home brewer, turned his hobby into a career as a brewer at nearby Saltaire brewery before deciding to take the plunge on his own venture. Extensive works were undertaken to prepare the mill building for brewing, with the first beers leaving the brewery in September 2015. Their Yorkshire-built kit is capable of producing up to five brews per week. A rotating range supplements their core range of five beers across a number of styles – from traditional English styles through to wheat beers and hop-forward American styles.
Drover is a session-strength copper coloured bitter, with Rye and Vienna malts providing a slightly toasty body. It is hopped mostly with British hops, but small additions of American varietals supplement the flavour and aroma. English ale yeast brings the classic esters to balance the aroma and flavour and the bitterness leaves a clean finish on the palate.
Every effort is made to match the brewery recipe precisely, but at times it maybe necessary to change some of the listed ingredients on the recipe to alternatives due to seasonality or availability, but in all cases we do our best replace with something that won’t impact on the overall taste and flavour of the beer.
