Ingredients:
Coriander, Turmeric, Fenugreek, Cumin, Fennel, Cardamom, Black Pepper, Salt, Garlic, Cloves, Ginger, Onion, Soy Sauce Powder (SOYA BEANS), Sugar, Monosodium Glutamate, Disodium Inosinate

King Katsu Chicken Burger
KING KATSU CHICKEN BURGER
Turn the Japanese classic into the ultimate chicken burger
Serves 2
Ingredients
2 chicken breasts
2 brioche burger buns
KING KATSU RUB
1-2 red chillies (1 diced 1 sliced)
2 Garlic cloves (minced)
Spring onions (2 diced 2 sliced)
Soy sauce
Panko breadcrumbs
3 eggs
Plain flour
1 Lime
Mayonnaise
Oil (for frying)
Method
- Between 2 pieces of cling film flatten the chicken breast so they are flat and an even thickness and place them into a bowl
- In the bowl add diced chilli, minced garlic, finely sliced spring onion, drizzle of soy sauce and 3 tsp of katsu rub mix all together with the chicken to ensure chicken is well covered. Leave for an hour in the fridge but overnight is best if possible.
- In 3 seperate bowls add plain flour, beaten eggs and panko breadcrumbs
- Take the chicken out the fridge and remove the onion and chillies from the chicken, dust inn the flour covering fully, transfer to the egg then into the breadcrumbs ensuring the chicken is fully covered, and transfer to a tray
- Heat up your oil of choice to 175c and fry your chicken for 6-8 mins or until golden and at least 75c internal. You may need to do this in batches as over crowding the pan will bring the oil temperature down too much. When each piece is cooked transfer to a kitchen roll lined tray to rest and drain off the oil.
- Whilst the chicken is frying in a bowl add mayonnaise, the juice of half of a lime and 1-2 tsp of katsu rub and mix well. Taste and adjust accordingly.
- Now time to plate. On the base of the bun place your lettuce followed by the chicken, top with the mayo and garnish with spring onion and red chillies for that extra kick. Add the top of the bun and ENJOY!
Use as a Rub!
Choose your flavour destination, find the rub that is influenced by that location and then simply rub it on your food to take your cook to new levels and your taste buds to new places with ease.
Rubs go well on all foods, not just meat, and don’t just limit them to being used on the BBQ.
Use as a Paste!
Pick a flavour, find the rub that is influenced by that flavour and then most rubs can be mixed with either an oil such as sesame oil, olive oil, or you could choose to mix with a mayo, yoghurt, or even a vinegar. Its an endless list of possibilities and combinations for you to play with.
Use as a Marinade
Mix up a paste, add layers of flavours with your paste, leave your food to absorb the flavours for at least an hour, or even better over night.

Searching to find the best sauce for our own table led us to concoct rampant Angus habanero ketchup. This all purpose hot, sweet and mustardy magnificence delivers a wicked flavour burst to taste buds and compliments all manner of foods.
Once we had one recipe, we just kept on going. Now we have developed 4 sauces with !!!kick ass flava!!! you’ll struggle to find outside the Americas. With other variants in the lab, were on a mission to give you an experience unrivalled, a taste of goodness; journey into the new world.
Angus and Oink represent a passion for BBQ and authenticity, the team focus on delivering a distinct flavour using fiendishly researched ingredients, tasty chillies and delivering on flavour…Kerr….PoW!!! We don’t use thickeners, preservatives, colourings and stuff you really don’t need to eat.
