A continuation of our series of beers based on the original Dennis King Galaxy Delight, this kit uses our favourite hop Centennial and one of our favourite yeasts Verdant.

A modern classic we think, that will deliver a thirst quenching pint reminding you of great pub beers, but whilst also bringing something of the new world beers into your glass.

As part our series of recipes based upon our original Dennis Kinds Galaxy Delight, we wanted to do a version with our favourite hop Centennial. This recipe changes the timings and hops but keeps the classic awesome grain bill. We’ve also switched the yeast out for Verdant yeast so it brings a little bit of mango sweetness to the party.

Crisp Vienna Malt
Dingemans Aromatic Malt

Total Grain bill 5kg

Centennial Pellets (100 grams)
LALBREW® VERDANT IPA Dried Yeast 11g (1 packs)


Method

THE MASH
Temperature °C: 66

THE BOIL
Boil time (mins): 90

Additions and timing:

30g Centennial for 60 mins
30g Centennial last 15 mins.

Secondary additions and timing:

40g Centennial Dry Hop for 2 days after fermentation

Yeast: Verdant Yeast
Fermentation temperature/steps: Pitch at 18c, on day 5 slowly raise to 20. Once fermentation ends raise to 22c for D rest for 48hrs

This beer is totally crushable, a glowing golden ale that will pour great from bottle or keg, or even better through a beer engine as a cask beer.. Its one of those that you can happily spend the afternoon enjoying with friends.

    This was a gift from Malt Miller due to a cock up with a delivery. It was my first homebrew on the Grainfather G30 – hit the gravity fine, no problems with the brew, the yeast fermented quickly (3 days!) giving off apricot flavours. After 18 days in the keg, this beer is one of the best pale ales I’ve ever drunk. Stone fruits in the aroma, floral slightly lemony hops, a crisp, biscuity malt flavour, and a well balanced bitter finish. I will brew this one again.

    Really excellent kit and easily the best pale ale I’ve made so far. Don’t be deceived by its simplicity but do be warned that it is utterly smashable and ready for drinking very quickly. The Verdant yeast and Centennial hops are an inspired combination.

    I don’t often use all grain kits, but sometimes it is nice to do something different. This one really didn’t disappoint and made me wonder if I should be using pre-packaged recipes more often! It turned out really well – nice and fruity with the hops and the malt perfectly balanced. In terms of appearance, it didn’t turn out quite as murky as the photo, but who cares? It’s the taste that counts!!
