Have a go at brewing Stiffo’s first Low ABV all grain beer! As featured in the video below, Stiffo wanted to see if he could have a go at brewing a beer which was under 2% and still remained true to his passion for hops, haze and body.

School Night is a hazy hop forward pale that shines with aroma from the Galaxy and Columbus on the Whirlpool, the top notes in the hop presence are then filled in with Nelson Sauvin in the dry hop, along with more Galaxy.

Fermented with SafAle S-33, which will attenuate low, there is enough body left in the final beer to make you think this is bigger than the sum of its parts. Coming in at 2%, this beer is very true to its name!

Galaxy® – BarthHaas® Pure Hop Pellets – 100g
Nelson Sauvin Pellets (30 grams)
Columbus T90 Pellets (50 grams)
Hallertauer Magnum – BarthHaas® Pure Hop Pellet (6 grams)
SafAle S-33 (1 packs)

THE MASH
Temperature °C (Step 1): 72

Mash notes: Feel free to increase you mash temp to 75 for a little more body to the beer and even less ABV.

THE BOIL
Boil time (mins): 60

Hop / kettle additions and timing:

6g Magnum @ 60min

Whirlpool / hop stand:

50g Columbus – 80c – 15min
50g Galaxy – 80c – 15min

Yeast: SafAle S-33
Fermentation temperature/steps: 19c 7-10 days

Secondary additions:

30g Nelson Sauvin + 50g Galaxy added to FV after fermentation.

You may need to conduct a diac rest at the end of fermentation

Cold crash after fermentation has completed and a diac rest has been done (raise by 2c for 2 days) then package.

This beer is LOW ABV, care must be taken to ensure cleanliness of all items used in both brewing and packaging. This is due to the lower alcohol content in the beer, which provides protection from microbiological contamination. Ensure your beer is stored cold after packaging.

    I loved my first brew of this and I’m about to order it again. It tasted great, with plenty of body & flavour, and I wouldn’t have otherwise known it was 2% ABV. I hit the gravity readings (a rarity for me) and it was a favourite with friends & family, so I recommend to anyone who enjoys this beer style.
