THE MASH
Temperature °C (Step 1): 54

Mash notes: Chevallier is a heritage malt and to get the very best from it, it deserves patience. This delicious malt benefits from a long mash. If your brewing system does not have temperature control, a single infusion mash at 65c will be fine, but be patient and let it rest for the allotted time.
THE BOIL
Boil time (mins): 90
Hop / kettle additions and timing:
Simcoe 20g @ 60 mins
Simcoe 30g @ 10 mins
Whirlpool / hop stand:
Simcoe 80g @ 80c for 20 mins
Yeast: WHC Dried Yeast -LAX
Fermentation temperature/steps: 19c for 10 days. Raise to 22c for 3 days before cold crashing and packaging.
Secondary additions:
Dry Hop in the fermenter once fermentation is complete. 70g Simcoe for 3 days max.
Comments:
The question was, if you could only brew with one malt and one hop for the rest of your days, what would they be? My answer is the ingredients in this stunning pale ale. Some SMASH (single malt and single hop) recipes can be a little bit one dimensional, but the Chevallier malt is anything but, and adds layers of delicious malt flavours which are complimented by the American Simcoe hops. An absolute delight.
Sometimes the use of Chevallier malt means you may end up with a higher finishing gravity than you are used to. Don’t worry about chasing numbers, trust the process and enjoy the flavour this heritage malt brings to the finished beer.

Wow! I reckon this is tastiest brew I’ve ever made. I can’t believe the depth of flavours in it – from a smash, and only 4.7%. I love it. It’s also brought Chevallier malt to my attention; I must try this in some other brews. If this were a commercial brew, I’d go out of my way to buy it. Definitely going on my ‘do it again’ list.
