Mash notes: Were using a stepped mash profile for this beer as we want to have a final beer with a little body to it, great head retention and deeper malt character. The temperatures used here will unlock and activate different enzymes through the range of temperatures to achieve the desired end result. You can do this manually if you have electric heating in your brew kettle or if using an all in one system such as a Grainfather you will will able to program the controller to achieve this for you.

THE BOIL
Boil time (mins): 60

Hop / kettle additions and timing:

15g Magnum @ 60mins

Add kettle finings and yeast nutrient at 15mins before end of boil.

Whirlpool / hop stand:

25g Perle & 25g Möst at flame out. Whirlpool and leave to stand for 20mins before transferring and cooling.

Yeast: Mangrove Jacks Bohemian Lager Yeast M84
Fermentation temperature/steps: 12c – 14-28 days

Secondary additions:

Once fermentation has finished add the further 25g of Möst and Perle hops to your fermenter and leave for 48 hours. At this point cold crash your beer over a few days to 4c and then dump the hop matter and yeast from the bottom of your FV, if possible. If you cant do this then ideally rack the beer to another fermenter or keg carefully. You will want to lager (age) this beer for at least 3 weeks at cold temperature, ideally 4c before carbonating and serving.

Comments:

Weve included a packet of Mangrove Jacks M84 yeast in this recipe kit however you ideally need to pitch more yeast that one packet contains. The result if you don’t could be slow, sluggish fermentation and off flavours derived due to the yeast being under stress.

You can avoid this by either adding a second packet of yeast to your order or growing a yeast starter for a few days before your brewday.

Post fermentation and dry hopping, your beer will improve over the coming weeks. This ageing period is vital with lager styles, we always say that the most important ingredient in making lager with traditional methods is patience.

Wonderful crisp Pilsner, great to taste at various stages in the lagering phase and has ended up an absolute banger. Excellent value for money too.
