Hop / kettle additions and timing:
27g Hallertauer Mittelfruh @ 60min
Add yeast nutrients and kettle finnings at 15 mins before the end of the boil
Yeast: WHC Dried Banana Split
Fermentation temperature/steps: 17c until you have reached final gravity and this has been stable 48 hours. Usually 10-14 days
Secondary additions:
After fermentation is complete package and carbonate to a moderately high level (2.5-3 volumes)
Comments:
This style of beer is all about freshness and drinking whilst young. You’ll want to enjoy on a warm late summer evening with friends and drink it whilst at its freshest. The balance of flavour and aroma is vital and the yeast used will be key to this. Fermenting on the cooler side of this yeasts capability will promote clove esters and moving to the warmer side of the scale will promote banana to show up. You can choose where you want this to sit but we prefer the clove profile, hence the fermentation temperature being lower.

I’ve been really enjoying wheat beers atm so this was a no brainer. A very straightforward brew day which resulted in a wheat beer that is very comparable to the commercially available brands, I’d even say better than some. This is an excellent recipe. I will be brewing this one again!

This kit has turned out a wheat beer that is better than many of the commercial brands that are available. First time I’ve used the WHC Banana Split yeast and it ripped through fermentation (under pressure @ 8psi) leaving the beer with those classic banana & clove hints. Grain to glass in just over 3 weeks. It will be a definite re-brew in the very near future as current stocks are going down far too quickly!

Really pleased with this one, slips down so easily and is hard to stop drinking. Wonderfully light and refreshing – just the job for a warm summers day.
It’s definitely best enjoyed young, it starts to lose it’s zing after about seven weeks. Recommended fermentation temperature is 17°C but I opted for 19°C because I’ve never fermented that low before. Gonna man up and go for 17 next time.

Brewed this with the WHC yeast at 18 degrees fermentation temperature – not sure on this one has come out with a slight tart / sourness to it – can’t taste the banana and clove flavours everyone talks about. I am reserving judgement on this one.

Absolutely beautiful beer. 4 weeks in the bottle, carbed up the traditional way and she’s good to go. Went a bit rogue and fermented at 22 degrees C to push the banana flavour and it suits me brilliantly. It’s one of those simple recipes that makes brings you back down to earth a bit! I’m probably going to order this over and over as my flip top bottles start emptying off and just keep a permanent stock of this fantastic beer. Alongside the more complicated stouts and IPA’s in the corny kegs. I went for standard airlock rather than pressure ferment to keep it as basic as possible and the quality of the beer just shines. 4g sugar in each bottle and it’s one hell of a lively beer! Just writing this review is making me look forward to opening a cold one later. This is going to go down fast! Probably my favourite beer on this site, then again, I might say that about the Hokum Stomp porter when it’s ready next week… oh well, looks like I’m going to have to brew them all!

Just tried my first after just under 3 weeks in the bottle as I couldn’t resist. Carbonated really well and a really lovely beer, although I didn’t get the banana notes quite as much as I’d have liked. Will definitely order again though – very straightforward to brew and great end result.
