True To Style – All Grain Recipe Kits #7 – Dark Mild with Simpsons Malts

These all grain kits are all designed with one thing in mind, making great tasting beer at affordable prices. We’ve built and created this range to offer our first “core” range of all grain kits that represent either great ingredients, methods or beer styles which we adore.

All of them are 23 litre batches and come in at sensible strengths for the mid week beers or sessions at the weekend! Read our full blog post on this range here!

A showcase of dark, roasted and crystal malts from the wonderful Simpsons Maltings as well as a little Carafa 1 from Weyermann. Balanced with floral notes from the distinguishable East Kent Goldings and clean fermentation from the yeast.

After fermentation is complete, this beer deserves some conditioning time. 2-4 weeks will allow the flavours of the malt bill to soften and amalgamate.

    Brewed this using the BIAB method, pitched the yeast straight from the pack and left to ferment at 20°c for 17 days. Then bottle conditioned.

    Excellent results. After two weeks it was already very drinkable with rich deep flavours and a clean finish. So easy to drink, but not sure you could call it a ‘mild’.

    However – after 7 weeks it was definitely a mild – reminded me of Thwate’s Best from the old days – easy drinking session ale. Carbonated to 2.2 volumes – will probably increase this next time. Highly recommended.
