True To Style – All Grain Recipe Kits #9 – Munich Helles

These all grain kits are all designed with one thing in mind, making great tasting beer at affordable prices. We’ve built and created this range to offer our first “core” range of all grain kits that represent either great ingredients, methods or beer styles which we adore.

All of them are 23 litre batches and come in at sensible strengths for the mid week beers or sessions at the weekend! Read our full blog post on this range here!

This Munich styles Helles is a great brew to try and take on and level up your skills as a home brewer. Featuring a stepped mash profile to unlock the malt character, youll need to be more hands on than a single infusion mash. It will also need a good length of time to lager post fermentation so ensuring all equipment and packaging is clean and sanitary will be vital to ensure your beer is a success.

Ingredients Included

Weyermann Bohemian Pilsner Malt
Weyermann Vienna Malt
Hallertauer Mittelfruh – BarthHaas® Pure Hop Pellet (50 grams)
LALBREW NOVALAGER™ – MODERN HYBRID LAGER YEAST (1 packs)

Method

Beer Style (main): European Lagers
Beer Style (sub): Munich-Style Helles
Batch Size: 23l
Original Gravity: 1.046
Final Gravity: 1.006
ABV %: 5.1
IBU: 20
Mash efficiency: 80

THE MASH
Temperature °C (Step 1): 52
Length (mins) (Step 1): 1
Temperature °C (Step 2): 62
Length (mins) (Step 2): 10
Temperature °C (Step 3): 65
Length (mins) (Step 3): 15
Temperature °C (Step 4): 72
Length (mins) (Step 4): 30
Temperature °C (Step 5): 76
Length (mins) (Step 5): 10

Mash notes: Stepped mash profile is used to maximise the fermentable sugars from the grain, this will result in a beer with deeper malt character and bready notes. Once you have mashed in at 52c immediately start to raise to the next step of 62c.

THE BOIL
Boil time (mins): 60

Hop / kettle additions and timing:

20g Hallertauer Mittelfruh @ 60min
10g Hallertauer Mittelfruh @ 30min
20g Hallertauer Mittelfruh @ 5min

Yeast: LalBrew NovaLager
Fermentation temperature/steps: 12c – 7-14 days

Secondary additions:

This beer would benefit from kettle fining to be added for improved clarity.

Comments:

Wait until you beer wort reaches a strong rolling boil before starting the boil timer. This will aid in driving off DMS from the wort. Failure to drive off DMS will result in a beer with a vegetal, cabbage like profile.

We suggest that after you have packaged the beer it is stored cold for 4-8 week for the lagering process to take place. Your flavours will round out, the malty notes will come through and the beer will develop into a drink that you will want to return to over and over again.

We strongly recommend a second packet of Novalager yeast for this brew of a starter to be grown. Pitching the right amount of yeast into a beer of this style is crucial for the success of this style.

Brewed this just after Christmas to take advantage of the cold weather as I still can’t chill my fermenter. It has turned out absolutely amazing after the four week lagering period. Been on gas in the kegorator for a few weeks now and it is superb. I used water chemistry too. No off flavours whatsoever either. Really recommend you try this kit. It’s great price too!
