Description

Boundary is a Cooperative Brewery based in Belfast, Ireland owned and run by its members. Opening the doors in 2014, it’s the first brewery in NI to bring together modern US styles with the more traditional Belgian/ French style beers.

This Hoppy American Wheat beer is brewed in collaboration with our friends at WHC lab, who helped Boundary create their House Yeast. Brewed with a silly amount of wheat and a clean West Coast yeast, this beer also enjoys a heavy dry hop of Amarillo.

Simpsons Finest Pale Ale Golden Promise®™
Simpsons Wheat Malt
TMM Jumbo Oat Flakes 26
Rice Hulls

5070g total malt bill and 160g of hulls

Amarillo Pellets (400 grams)
WHC LAX Liquid Yeast  (1 packs)

Beer Style (main): Hybrid/Mixed
Beer Style (sub): Light American Wheat Beer with Yeast
Batch Size: 23L
Original Gravity: 1.050
Final Gravity: 1.008
ABV %: 5.4%
IBU: 7

THE MASH
Temperature °C: 65
Length (mins): 60
Out temp °C: 75
Out time (mins): 10

THE BOIL
Boil time (mins): 60 minutes

Additions and timing:

Whirlpool @82C 46g Amarillo

Cool and Pitch LAX @ 20C
After 24 hours lift temp cap to 22C

Secondary additions and timing:

When beer has reached terminal gravity drop temp to 14C and dry hop with 354g Amarillo.

Depending on equipment and ability rause once daily for 3 days. Cold crash as low as close to -1C as possible.

Yeast: WHC LAX
Fermentation temperature/steps: Pitch at 20c for 24hrs, then raise to22c until completed.
