Oktoberfest “Bamberfest” All Grain Recipe Kit
This All Grain Recipe Kit is for Rob’s Home Brew Smokes as part of our Seasonal Brewing Series on YouTube. To prepare for this years Oktoberfest, Rob, Stiffo and Rakey all decided they wanted to brew beers at the traditionally correct time of year which then allows the beer to age in cold conditions for a period of 6 months before drinking in September and October. Rob’s take on a mix of favourite beer styles. Malty and rich Festbier with a 20% Rauchmalt addition. Lighter in colour than the traditional Bamberg style smoked beers making it highly drinkable . Bitter enough and lower in ABV to be able to drink in quantity.
Please note, yeast is optional in this recipe allowing you to choose a yeast or method of yeast prorogation that suits your style of brewing.

Saazer – BarthHaas® Pure Hop Pellet (120 grams)
Yeast – Brewers choice. Rob recommends either
WLP920 Old Bavarian Lager – PurePitch® Next Generation or WHC Einstein

Final Gravity: 1.012

Mash efficiency: 80%
THE MASH
Temperature °C (Step 1): 50
Length (mins) (Step 1): 30
Temperature °C (Step 2): 66

THE BOIL
Boil time (mins): 60
Hop / kettle additions and timing:
Saaz 120g 60 Mins
Yeast: Whitelabs WLP920 Old Bavarian Lager Or WHC Einstein.
Fermentation temperature/steps: 11c for 14 days. 16c 4 days. 4c 28 days
Secondary additions:
Added Brewtan B to the entire water volume 32.16 litres – 0.32g
Added Brewbrite to the boil, 4g 10 mins before the end. Draw off a cup of wort at the beginning of boil, add the measured amount of brewbrite and stir sporadically through the boil. Add the entire cup back into the boil 10 mins before the end.

I brewed this shortly after the video using WHC Einstein and it’s been sat in the corner of my keezer ever since. I had a sneaky taste last week and I confess now I’m 5 litres in. If you can wait until September I commend your willpower as I suspect mine will be gone by then it’s the best lager I’ve ever tasted. I shall be double batching next time around. We’ll done MM.
