This juicy hop was born and bred at CLS Farms in Moxee (a sub-region of the Yakima Valley). Bursting with juicy pineapple and tropical notes, this dual-purpose hop has been featured in many great beers since its release in 2010. Big Alpha Acids (13-17%) make this an effective and efficient bittering hop, but can be used in late additions to maximise the fresh, fruity aroma and flavour. El Dorado® is an exceptional new dual-purpose hop with both high Alpha Acid and intense flavors and aromas. As a bittering hop, El Dorado® lends a firm but balanced bitterness. When used in later additions, El Dorado® brings bright tropical fruit flavors and aromas of pineapple, pear, watermelon, and stone fruit.

Thanks to its low viscosity, this pure varietal hop product is perfect for late hopping in modern whirlpool equipment with low solid matter capacity. Beer losses are significantly reduced compared with using pellets for late hopping.

To meet this demand, BarthHaas has introduced a comprehensive quality management system (QMS) [RS1] based on the proven ISO 9001:2015 standard. Our QM system also includes a concept that guarantees optimum product safety on the basis of international HACCP guidelines. An important focus of this concept is the BarthHaas test guarantee [RS3], which is unique in the hop industry to date.
DOSING
It is recommended that Incognito be dosed directly to the brewhouse whirlpool to ensure optimal flavour and aroma utilisation. Timing of addition can influence final beer flavour and aroma; brewer’s discretion will dictate dosage timing and addition rate. As a guideline, dosing Incognito at a rate of 50-200 grams per hL (0.5-2g per L) of beer is recommended for initial trials, then adjusted to achieve desired results. To ensure optimal flowability, product may need to be warmed to room temperature from cold storage conditions. Contents may naturally separate, shake before use.
Maximum benefit is achieved with mixing INCOGNITO in hot wort immediately prior to dosing in the whirlpool. This can be achieved any number of ways and depends on each brewer’s equipment type and arrangement. For example, a hop-doser prior to the whirlpool is an ideal vehicle to more thoroughly solubilize the product as it enters the whirlpool. Where mixing prior to the whirlpool is not practical, INCOGNITO can be added directly to the whirlpool with satisfactory results.
USAGE:
Generally a 1:6 replacement ratio.
Usage is 1g/L Incognito in whirlpool is equivalent to 1.5lb/bbl pellets (5.8g/L).
NOTE:
Incognito is a hop derived product for use in the Whirlpool only. It is not recommend for dry hopping or for use in the kettle.
Flowable means that is is not set like a resin, it does however require warmth to make it more liquid, and it will also be very sticky at lower temperatures and more difficult to clean off any surface. To remove use hot soapy water, then rinse thoroughly.
Do not eat or taste or consume this product. Only to be used as an ingredient in brewing. If you get it on your hands immediately wash to remove it.
