This recipe was provided for the book from a professional brewer, all of the recipes were scaled by the writers to a 20ltr batch size using 75% efficiency.

Where ever possible we have matched the exact ingredients, however in some recipes slight changes may be required and volume adjustments based on ingredient available to homebrewers. Be sure to fully read the below details before purchasing so you are fully confident in the process and aware of any ingredients which are not included with this kit that you will need to add.

Dextrose 800g/1.76lb @ 45 mins

Centennial 8g/0.28oz @ 5 mins

Whirlpool / hop stand:

Whirlpool (20 minutes @ 85°C/185°F)
Cascade 24g/0.85oz

Yeast: Fermentis SafAle™ US-05
Fermentation temperature/steps: Pitch 2 packs (23g/0.8oz) of Fermentis SafAle™ US-05 at 18°C/64°F and allow it to free-rise to 21°C/70°F. Ferment until gravity is stable, then add dry hops.

Secondary additions:

Dry hop (at terminal gravity)

Cascade 80g/2.8oz
Chinook 40g/1.4oz
Centennial 20g/0.7oz

If you’re able to, rouse with CO2 after adding the hops and on the two consecutive days after adding, then cold crash and remove the trub before maturing for 28 days.

Burning Sky – Barley Wine

Located in the foothills of the beautiful and inspirational South Downs on the south coast of England in the stunning small village of Firle, Sussex, Burning Sky describes itself as a brewer’s brewery. Founder Mark Tranter is known for his love of both punchy hop forward pales and of the beautiful Belgian beer tradition and this is mirrored perfectly in their output. Alongside crowd pleasers such as flagship Pale Ale, Arise, Tranter and his team produce a range of true farmhouse-style beers, aged in oak barrels and foudres, which are then blended and often finished on fruit or grape skins to add incredible depth of flavour. Their mixed fermentation range is released throughout the year in a bottle conditioned 750ml format and these are well worth seeking out.
This one-off special American-style barley wine was released in 2021 and what I loved about it was how the intense hoppiness sat perfectly alongside the deep caramel malt flavour imparted by a hefty dose of crystal malt. Burning Sky says, “Put your feet up and contemplate this big, bold, classic US style barley wine. Rich mouthfeel with caramel notes from Maris Otter and crystal malts. Robust bitterness with an apparent yet balanced hop aroma to muse upon.”
