Description

Clear Cut Pale is built for brewers who want something sharper, drier, and more deliberate than a typical modern pale. Built around the new Fresh Wort Base 8, which is a modern clean West Coast Style, using Citra and Bru-1 in the Whirlpool!

This isn’t a soft, hazy beer. It’s a lean, West Coast-inspired pale with a clean malt base and a firm bitterness that lets the hops cut through properly.

Using a simple dry hop of Columbus and Centennial, you’ll get bright citrus, light pine, and a crisp finish that keeps the beer highly drinkable without any sweetness lingering behind.

If you want to push it further, a small addition of  sulphate via Gypsum into the water profile will take this from a standard pale into something much closer to a classic West Coast expression. – Simply add half a a teaspoon into the water you are diluting the wort with.

Fresh Wort Kits are an easy way to produce commercial quality beer at home. Unlike traditional kits made from extract, these are brewed in a professional brewhouse and packaged fresh, so all the flavour is already there — you just complete the fermentation.

WHC Dried Yeast – High Voltage – 11g Packet (1 pack)

Method

Beer Style (main): American Ales
Beer Style (sub): American-Style Pale Ale

Original Gravity: 1.055
Final Gravity: 1.012
ABV %: 5.6
IBU: 25

Base Process

  1. Pour the fresh wort into your fermenter
  2. Top up with water to 20 litres with good quality water
  3. Aerate well
  4. Pitch yeast

Yeast: WHC High Voltage x 1 11g Packet
Fermentation temperature/steps: 21c until final gravity is stable (possible as short as 3 days) – then raise to 25 for a day to clear any diacetyl.

Secondary additions:

After your diacetyl rest, if possible cool the beer to 14c and allow all yeast to settle before dry hopping your beer – if you have the ability to remove the yeast slurry before adding the hops, it would be beneficial.

Add your dry hop charge and hold at 14c for 2-3 days before cold crashing the beer, if you are able to. Again, if you can – remove the hops just before you start the cold crash and then dump extra hops and yeast that settle during the cold crash – each day. This will give you the best chance of a super clear beer at the end and after a short period of conditioning. Also, after the dry hop and before you start cold crashing, add your brausol finings to the fermenter
