Description

We were approached by the Hop Kettle Brewery in Swindon to create a recipe for the Eternal Optimist bar that is located in Old Town Swindon. Which would then brewed on the full sized kit at their brewery.
This is the original 7.5% recipe that was created which was then scalled up to bigger kit size and a lower abv, it is a big hoppy West Coast IPA, backed up with stunning malts from Dingemans, it hides it strength well and will keep you coming back for more.


Ingredients

Dingemans Pale Ale Malt (7005 grams)
Dingemans Biscuit Malt (750 grams)
Chinook Pellets (150 grams)
Centennial Pellets (180 grams)
WHC LAX (2 packs)

Beer Style (sub): American-Style India Pale Ale
Batch Size: 23L
Original Gravity: 1063
Final Gravity: 1010
ABV %: 7.5
IBU: 34.4

THE MASH
Temperature °C: 66
Length (mins): 60
Out temp °C: 75
Out time (mins): 10

THE BOIL
Boil time (mins): 60

Additions and timing:

50g Chinook – 10 min
30g Centennial – 10 min
80g Centennial – Whirlpool @ 80c for 20mins
50g Chinook – Whirlpool @ 80c for 20mins

Secondary additions and timing:

50g Centennial – Dry Hop 2 days
50g Chinook – Dry Hop 2 days

Yeast: Bry-97
Fermentation temperature/steps: 20c until FG achieved

    Having used this as a base recipe and tweaked it somewhat I can highly recommend this pack. Nice strong beer which hides it’s strength very well behind the lovely flavours.
