Dennis King is an experienced brewer and has placed in various competitions with his Galaxy Delight recipe. It also placed 2nd the Pale Ale/ESB class at The Homebrew Festival held on the 17th May 2014.

DK kindly shared that recipe with us all those years ago and it has grown into a series of beers that highlight and showcase new modern hops.

This recipe will help you to try this new variety and experience its flavours and hopefully gain understanding how to use it in your future recipes.

Crisp Pale Ale Malt
Crisp Vienna Malt
Dingemans Aromatic Malt

Total Grain Bill 5kg

Strata T90 Hop Pellet (100 grams)
WHC LAX Yeast (1 packs)


Method

Beer Style (sub): Classic English-Style Pale Ale
Batch Size: 23ltr
Original Gravity: 1050
Final Gravity: 1012
ABV %: 5.0
IBU: 61

THE MASH
Temperature °C: 66
Length (mins): 90
Out temp °C: 75
Out time (mins): 10

THE BOIL
Boil time (mins): 90

Additions and timing:

15g Strata for 90 mins
45g Strata last 15 mins.

Secondary additions and timing:

40g Strata Dry Hop when fermentation ends

Yeast: NBS West Coast
Fermentation temperature/steps: 20c until FG

    This kit in my opinion is excellent, brewed it for this summer, followed the instructions provided, used Tesco bottled water adding minerals to recommended level for this beer style, the only departure from the kit was at the point of adding the last dry hop of 40g Strata I also added 100g of Nectron.
    Cold crashed 3 days at 1 deg, transferred to keg left 6 weeks at 5 deg then lowered to 3 deg for serving, slight haze but clear no need for gelatine or similar in my opinion.
    Full of taste and aroma liked by everyone who tried it, will definitely brew again, one of my favourites to date.
