Description
As part of a series of posts on our Facebook and Instagram channels, we asked the wonderful home brew community to help us design a beer – and here it is! A glorious English IPA with a modern twist. You all chose the malts, hops, yeast, and brewing system you wanted to see us use in this beer. We then took these components and built a recipe that balances all these factors while respecting tradition for the beer style, with a few modern twists.
There are only two malts used: Extra Pale Maris Otter by Crisp and Simpsons Heritage Crystal Malt. We decided to use just 5% of the Heritage Crystal Malt to avoid overpowering the other ingredients while still contributing subtle sweetness and a glorious colour.
For hops, we went with a carefully selected trio: East Kent Goldings for bittering, Harlequin as the late addition, and UK Cascade in a whirlpool. The result is a beautifully balanced beer with bitterness, spicy floral notes, and a touch of orange citrus in both aroma and flavour.
Finally, for yeast, you all picked Verdant IPA – a strain we’ve used many times in hazy juice bombs but never in a classic beer style. However, after visiting Verdant in the summer of 2024 to film for our Sundialer Clone, we saw first-hand how well their house yeast works in their cask-style beers!

Fermentation temperature/steps: 20c 7-10 days
Secondary additions:
Post fermentation, if possible remove yeast slurry from the bottom of your FV. Cold crash to 4c for 48-72 hours. Add Brausol finings 48 hours before packaging. Carbonate to apx 2.4vol.
