Frío Claro is a clean, easy-drinking home brew lager designed for the moments where you just want something cold, crisp and reliable — late evenings in the sun, something in hand during a match, or the first pint after a long brew day.

This all-grain recipe kit keeps things simple where it matters. Crisp Clear Choice malt and flaked maize give you that classic pale, smooth body, with a small addition of Munich to stop it feeling thin. A late addition of Motueka brings a soft lime note — subtle, refreshing, and exactly where it should be.

But this beer is built around the yeast.

At the centre of this all-grain home brewing recipe is WHC Cerveza Campeón, a modern Mexican lager strain that does more than just ferment clean. It delivers a crisp, polished finish with a gentle citrus lift, helping to round the maize, smooth the bitterness, and bring a bright edge to the beer without pushing it out of style.

Mexican lagers are built for refreshment. Rooted in European brewing traditions but shaped by local ingredients, they’re typically light, crisp and highly drinkable, often brewed with maize to soften the body and create that clean, dry finish. In Mexico they’re almost always served cold, with a mild flavour and low bitterness, making them the kind of beer designed for warm climates, social drinking, and easy enjoyment.

For home brewers, that means a lager that tastes finished quickly — clean, balanced, and properly drinkable without months of conditioning.

Pour it cold and you get pale gold clarity, a tight white head, soft grain up front and a clean, dry finish with a flick of lime. The kind of home brew lager that works just as well on a warm evening as it does watching the football with a few mates.

Motueka T90 Pellets – Hop Revolution (40 grams)
Hallertauer Magnum – BarthHaas Hop Pellets (9 grams)
WHC Dried Yeast – Cerveza Campeón – 11g Packet (2 packs)

THE BOIL

Hop / kettle additions and timing:

9g Magnum Hop Pellets @ 60min
20g Motueka Hop Pellets @ 5min

Add Promix kettle finings and yeast nutrient @ 5mins (NOT INCLUDED)

Whirlpool / hop stand:

Chill to 80c and add 20g Motueka Hop Pellets and whirlpool for 15mins, before chilling and transferring to your FV

Yeast: 2 x WHC Cerveza Campeón: Mexican Lager Yeast 11g Packets
Fermentation temperature/steps: 12c for 7 days, then allow to free rise to 18c until fermentation has completed. Hold at 18c for 48 hours after fermentation for a Diacetyl rest

Secondary additions:

After fermentation, add brausol finings (NOT INCLUDED) to your FV and then start to cold crash – as cold as you can achieve. Hold here for 48-72 hours (if not a little longer…) – then package and allow for a few weeks further conditioning time to allow for maximum clarity and for flavours to develop.
