This recipe was provided for the book from a professional brewer, all of the recipes were scaled by the writers to a 20ltr batch size using 75% efficiency.
Where ever possible we have matched the exact ingredients, however in some recipes slight changes may be required and volume adjustments based on ingredient available to homebrewers. Be sure to fully read the below details before purchasing so you are fully confident in the process and aware of any ingredients which are not included with this kit that you will need to add.

Mash notes: Target Water Profile: Heretic uses calcium sulphate to push the sulphate level to around 150ppm while keeping chloride levels low. Mash target is 5.2pH.

Whirlpool (20 minutes @ 80°C/176°F)

Yeast: 3 X Fermentis SafAle™ US-05
Fermentation temperature/steps: Pitch 3 packs (34.5g/1.2oz) of Fermentis SafAle™ US-05 and ferment at 20°C/66°F for 7 days until gravity is stable, then dry hop.
Secondary additions:
Dry hop (at terminal gravity)
Citra 100g/3.52oz
Amarillo 100g/3.52oz
Simcoe 50g/1.76oz
Dry hop for 3 days then cold crash to 0°C/32°F for 7 days.

Heretic used to release this beer only once a year, the day before the Superbowl. People that showed up on release day got to fill their growlers directly from the fermenter. You cant get beer any fresher than that!
