This recipe was provided for the book from a professional brewer, all of the recipes were scaled by the writers to a 20ltr batch size using 75% efficiency.
Where ever possible we have matched the exact ingredients, however in some recipes slight changes may be required and volume adjustments based on ingredient available to homebrewers. Be sure to fully read the below details before purchasing so you are fully confident in the process and aware of any ingredients which are not included with this kit that you will need to add.

Mash notes: Water: Mash is treated with an equal amount of calcium chloride and table salt for a softer water profile. Phosphoric acid is used for a mash pH adjustment to 5.1pH

Magnum 10g/1.3oz @ 60 mins – This replaces Horizon Hops which are not available
Lactose 1.75Kg/3.85lb @ 15 mins
Dextrose 1Kg/2.2lb @ 15 mins
Yeast: Fermentis SafAle™ US-05
Fermentation temperature/steps: Pitch 4 packs (46g/1.6oz) of Fermentis SafAle™ US-05 and ferment at 19°C/68°F until gravity is stable, then add flavourings and cold crash

The original recipe used a heady mix of vanilla custard, toasted almond, hazelnut, cinnamon danish, waffle and chocolate flavourings to layer into the finished beer. Once you’ve selected your flavourings, grab a small dosing pipette and draw off a decent sized sample of the beer of a known liquid volume (e.g. into a lined glass). You can then experiment with dosing your flavourings and scale up to the full brew remaining length.

Monster Cookie is an 11.5% ABV chocolate chip cookie Barleywine made with real chocolate chip cookies. It has a strong, complex malt flavor beautifully balanced by the aromatic hops and with a mellow alcohol warming. The mouthfeel is luscious and the chocolate chip cookies play beautifully with the malt. It finishes dry and crisp without any cloyingly sweet aftertaste.
