This recipe was provided for the book from a professional brewer, all of the recipes were scaled by the writers to a 20ltr batch size using 75% efficiency.
Where ever possible we have matched the exact ingredients, however in some recipes slight changes may be required and volume adjustments based on ingredient available to homebrewers. THE MASH
Temperature °C (Step 1): 66

Mash notes: Water: Heretic uses calcium chloride and table salt with a small amount of gypsum to target a profile of 200ppm chloride to 100ppm sulphate. Liquor is acidified with phosphoric acid to target a mash pH of 5.3
Add in an alpha-amylase enzyme (not included) as per the manufacturer’s instructions and dosing rates. It is typically added to the mash but can also be added to the boil.

Columbus 40g/1.4oz @ 60 mins
Whirlpool / hop stand:
Whirlpool (for 20 mins at 80C/176°F)
Citra 60g

Yeast: 4 x Fermentis SafAle™ US-05
Fermentation temperature/steps: Pitch 4 packs (46g/1.6oz) of Fermentis SafAle™ US-05 and ferment at 19°C/68°F until gravity is stable, then dry hop. During fermentation add 3.4kg/7.5lb of Dextrose, adding it evenly over five days. Create a solution into which you also add yeast nutrient (not included) at the recommended dose.
Secondary additions:
Dry Hops (add post fermentation)
Citra 50g
Mosaic 50g
Azacca 50g
There’s likely to be a lot of yeast trub generated by the high ABV fermentation, so dump the trub out or transfer the beer off it if you can before adding the dry hops.
Comments:
Heretic – Whale Juice – Quadruple IPA – 18% ABV
Now this is a beast of a beer, fermented out to 18% ABV. Brewing high alcohol beers is a really involved process as although many brewer’s yeasts can tolerate such harsh and high alcohol environments, they need to be well fed and encouraged along in order to do so. At the core of this fermentation is the principle that adding simple sugars later in the fermentation process allows the yeast to focus on the more complex sugars first. Adding lots of simple sugars up front (e.g. in the kettle) can cause stalling. It’s also important to ensure the yeast has plenty of nutrients and oxygen as fermentation progresses.
The approach Heretic takes is to create a sugar and nutrient solution which is dosed into the active fermentation each day over the first six days, after which more oxygen is bubbled through to keep the yeast happy. The recipe also makes use of the alpha-amylase enzyme which breaks down complex, large insoluble starch molecules into soluble, smaller molecules making them more easily digestible by yeast.
Of course, being a Quadruple IPA, the beer is also not short of hops!
