The first homebrew all-grain recipe kit in our new series on YouTube, where we teach you how to design and brew your first recipes! This All-Grain Beer Kit for a classic West Coast IPA is both easy to brew and great-tasting, with a big hoppy kick on both the aroma and flavour. We’ve used a simple grain bill that allows the hops to shine through. The hops we’ve chosen are classic for an IPA: Columbus, Chinook, and Centennial, which bring lots of classic hop character to the beer, such as pine, resin, and spiky bitterness. Refreshing to drink but packing a punch. We’ve also opted for the versatile and easy-to-use dry yeast strain, High Voltage from WHC Lab. As this is a clean-fermenting, thermo-tolerant yeast, the ability to control your fermentation temperature is reduced, leaving you with a clean yeast profile that allows both the hops and some grain flavor to stand out.

We brewed this beer on a very capable yet approachable system, comprising one of our 50L TMM Stainless Steel Kettles, a 35L Grain Basket and a Magnetically Coupled Pump to recirculate the wort during the mash and then to whirlpool the hops after the boil. We used an induction hob as our heat source, but you could also use one of our gas burners or heating elements to heat and boil your brew.

This is a great base recipe for your first Home Brew West Coast IPA. If you wish, you can add a larger dry hop to enhance the fresh hop aroma and flavour. We suggest increasing to around 50-60g of each variety as a good starting point. Alternatively, you could use different hops for the dry hop, such as Citra, Mosaic, and Simcoe.

Centennial – BarthHaas® Pure Hop Pellets (70 grams)
Chinook – BarthHaas® Pure Hop Pellets (70 grams)
Columbus – BarthHaas® Pure Hop Pellets (73 grams)
WHC Dried Yeast – High Voltage – 11g Packet (1 pack)

THE MASH

Mash notes: We used a 50L TMM Kettle and 35L Grain Basket to mash and then boil this beer. You may find higher efficiency if brewing on other systems and result with a stronger beer.

THE BOIL
Boil time (mins): 60

Hop / kettle additions and timing:

13g Columbus @ 60mins
10g Chinook @ 30mins
10g Centennial @ 10mins

Whirlpool / hop stand:

Cool to 80c and add 30g each of Columbus, Centennial and Chinook. Whirlpool for 30mins followed by a further 30mins stand to allow the hop material to settle before transferring to your Fermenter.

Yeast: WHC High Voltage
Fermentation temperature/steps: 28c – 5 Days

Secondary additions:

After Fermentation has completed (this may be as short as 48 hours) cool down from 28c to between 15-20c and add 30g each of Columbus, Centennial and Chinook. Allow these hops 48 hours contact time before removing, if possible. If you have the ability to rouse the hops during their contact time (about 24 hours in) then do so. After removal of the hops (if you can) cold crash to around 4c for 48 hours before you package, ideally in a keg.
