Featuring your choice of either the new Blitz Lager strain of yeast from WHC Lab or Imperial Yeast G03 Dieter. Crisp, drinkable Kolsch is a joy to both brew and drink – with a balance of both light malt character, pleasing and refreshing bitterness as well as gentle hop aroma in the form of subtle floral, herbal and spicy notes from the use of Hallertauer Hersbrucker from Germany.
Kolsch is subtle sweet beer that over the years I grew to love whilst visiting the stunning city of Cologne, sitting outside of the Fruh Brauhuas drinking endless supply from those tiny 200ml glasses whilst waiting for some amazing roast pork knuckle to be cooked.
Its more than just a lager, its something to be enjoyed and sunk in volume.

Yeast: Imperial Dieter or WHC Lab Blitz Lager – please use a yeast calculator as you will need to decide if you make a starter for the yeast or buy additional yeast.
Fermentation temperature/steps: Ferment at 16c. When finished allow to lager for 4 weeks

Kolsch is subtle sweet beer that over the years I grew to love whilst visiting the stunning city of Cologne, sitting outside of the Fruh Brauhuas drinking endless supply from those tiny 200ml glasses whilst waiting for some amazing roast pork knuckle to be cooked.
Its very subtle and soft, slightly malty sweetness up front with a nice crisp end. It is known for its easy drinking with a nice delicate hop fruitiness.
The beer will require time and finings to get a clear finished beer due to the yeast not flocculating easily.

This is a beautiful drink.
Brewed and conditioned as instructed, the beer turned out to be true to the drinking description.
After conditioning for a month at around 4c, the beer was served at around 8c with 15psi C02. Crystal clear, slightly malty, beautiful white head that lasted to the bottom of the glass.
The beer is so subtle and drinkable it defies its strength!
As a precaution I used a starter with the imperial yeast, and the finished gravity after two weeks was 1012.
