Oktoberfest Märzen All Grain Recipe Kit

This All Grain Recipe Kit is for Stiffo’s Home Brew Märzen as part of our Seasonal Brewing Series on YouTube. To prepare for this years Oktoberfest, Rob, Stiffo and Rakey all decided they wanted to brew beers at the traditionally correct time of year which then allows the beer to age in cold conditions for a period of 6 months before drinking in September and October. The finished beer is deep copper in colour, with medium and controlled amounts of bitterness and a deeply bread, malty slight toasty flavour. A dry finish allows you to enjoy pint after pint and celebrate this wonderful period of the brewing calendar! The biggest challenge will be leaving this beer to age and not being tempted to tuck in too early!

Please note, yeast is optional in this recipe allowing you to choose a yeast or method of yeast prorogation that suits your style of brewing.

THE MASH
Temperature °C (Step 1): 66
Length (mins) (Step 1): 60

Mash notes: James used a single 66c main mash step, you may wish to add in a 55c protein rest before this for a 30min period of time. This can help with extraction of the sugars in the Bohemian Pislner Malt due to its less modified nature.

THE BOIL
Boil time (mins): 60

Hop / kettle additions and timing:

50g Hallertauer Mittelfrüh Hops @ 60min
20g Hallertauer Mittelfrüh Hops @ 20min

Yeast: Bavarian Lager from Wyeast 2 x Packets (OPTIONAL)
Fermentation temperature/steps: 11c 14-28 days or until final gravity has been achieved.

Secondary additions:

Once primary fermentation has been completed, this beer needs to be transferred to a very well cleaned and sanitised keg and left to mature in a cold place over the coming months. Ideally until mid September (6 months) and then enjoyed during the Oktoberfest time period.
