Description
This recipe kit has everything you’ll need to make up 13L of molasses sugar wash at around 15% ABV, after fermentation. After fermentation is completed you’ll be able to take this wash and process it through a still to produce a rum style spirit. If you are using a Pot Still such as the T500 Alembic Dome or the Air Still Pro then you’ll be likely to produce a finished spirit with lots of character and then move to ageing.
What’s Included?
- 3KG Molasses Sugar
- 1KG Light Brown Sugar
- 1 Pack of Rum Distillers Yeast
- 1 Pack of Distillers Nutrient (Optional)
Method
Place around 3L of hot water into your sanitised and clean fermentation bucket, add the sugar in stages and stir to dissolve. Top up with more water as needed to ensure the sugar is fully dissolved. Once all the sugar is dissolved into the water, top up with cold water to around 13L, you can go a little higher if needed, to around 15L. Check the temperature is below the threshold for the yeast. If not then place the lid on and allow for the wash to cool.
Now mix in 2 cap fulls of the yeast nutrient, then you can add your yeast. Seal your Fermenter and allow it to stand at ambient temperature for apx 14 days, until fermentation has finished.
Once fermentation has completed and you have checked with a hydrometer your wash is now complete and you can move onto the next steps of distilling! After you have distilled your spirit then you can age for up to a year on oak chips to develop flavour and further character
