This recipe was developed and created by Rakey when Stiffo laid down the challenge that he couldn’t brew a juicy hazy NEIPA for less than £1.50 a pint!

Rakey took learnings he has gained from working with brewers at Track bringing in a new brewing method, or as Stiffo calls it a ‘gimmick’, he also followed some tips that Sean at Siren Craft gave him about their Focal Banger influenced Time Hop Beer, and this recipe was born out of those learnings.

The finished beer is packed with citrus & stone fruit flavours and aroma, whilst also delivering a balanced bitterness. A really smashable NEIPA that will keep you wanting more.

TMM Rolled Wheat Flakes (Flaked Wheat)

Saazer – BarthHaas® Pure Hop Pellet (100 grams)
Citra Pure Hop Pellets (100 grams)

Additions and timing:

100g Saazer Pure Hop Pellets in the mash added with grain

60 min 5g Mosaic Pure Hop Pellet
40 min 10g Mosaic Pure Hop Pellet
20 min 15g Mosaic Pure Hop Pellet

Whirlpool/Hop Stand @ 80c
20g Citra Pure Hop Pellet
70g Mosaic Pure Hop Pellet

Secondary additions and timing:

Dry Hop once fermentation complete, drop to 14c
80g Citra Pure Hop Pellet 24 hour contact time

Yeast: WHC Hop Unlock
Fermentation temperature/steps: 18c until FG reached (roughly 10 days)

This recipe features mash hopping to add complexity to the beers taste,. and then fermented with Hop Unlock to maximise this new method of brewing that enhances the presence of hop thiols.

For water chemistry Rakey used the standard Hazy IPA target water using the Grainfather app and RO water as starting point.
