Our friends over at The Hop Addition Podcast recently did a trial of the amazing Pineapple Passion Yeast from WHC Lab! The four of them all brewed some different beers to see just how this amazing yeast strain performed – it’s the perfect choice for anyone looking to craft juicy tropical brews with a vibrant pineapple flavour and aroma. Suitable for not only New England IPAs and Pale Ales but also West Coast style IPAs and Pales.
This recipe is by Andy Lynch of High Road Brewery Homebrew Channel– a session strength IPA which features the beautiful hop combo of Citra and Nelson Sauvin as well as the amazing Pineapple Passion Yeast from WHC.

BESTMALZ Chit Malt (250 grams)
Crisp Flaked Torrefied Oats Including Husk (1400 grams)
Dingemans Pilsen Malt (1400 grams)
Thomas Fawcett Golden Promise Pale Ale Malt (2600 grams)
Nelson Sauvin Pellets (100 grams)
Citra T90 Pellets (133 grams)
WHC Dried Yeast – Pineapple Passion – 11g Packet (1 pack)
BarthHaas® INCOGNITO® – El Dorado® 16g – BB: 30/10/24 (1 pack)

Brewing equipment: 3 Vessel SSBrewtech with Thermo Mash Tun
THE MASH
Temperature °C (Step 1): 72
Length (mins) (Step 1): 60
THE BOIL
Boil time (mins): 60
Hop / kettle additions and timing:
3g Citra at 60mins
Whirlpool / hop stand:
Hot dip 4L in the fermenter and add incognito.
Chill wort to 22C and add the rest to fermenter
Yeast: WHC Pineapple Passion at 22C
Fermentation temperature/steps: Ferment at 22C once done drop to 14C and dryhop
Secondary additions:
Dryhop with 130g Citra and 100g of Nelson Sauvin
