Each kit contains all the ingredients required, crushed malt, hops, style specific yeast and priming sugar. Plus, kettle finings, yeast nutrient and where applicable vegan finings. A clean, sessionable Kellerbier recipe designed for home brewing, combining traditional German lager character with a subtle modern hop twist. Built on a soft, bready malt base of Clear Choice Ale malt, backed up with Munich for depth and a touch of Cara Gold for gentle sweetness and colour, this home brew delivers a smooth, balanced profile with plenty of drinkability.
Mandarina Bavaria hops take centre stage, layered throughout the boil to bring a refined mix of light citrus, orange and subtle herbal character, complementing the malt rather than overpowering it. Fermentation temperature/steps:
Cool wort and pitch yeast at 12c and steadily raise to 16c over the fermentation period of 10 days. Once this is completed and you have achieved your final gravity raise the temperature to 18c for 48 hours and then start dropping as cold as you can, ideally around 2c, over a 4 day period. Hold at this temperature for 5 days before moving to package you beer.

Carbonate to apx 2.5vol CO2 via forced carbonation if adding to a keg or with the 200g bag of dextrose to bottle condition – check out our priming calculator for exact amounts of sugar to add
Comments:
Once packaged, this lager will benefit from a period of conditioning (lagering) – ideally for a few weeks at least but it will improve the longer you can leave it. Conditioning temperatures are ideally quite cold foo this beer style, around 4c.
Mini-Decoction Mash (Optional Step)
To add extra malt depth and a more traditional lager character, this recipe includes an optional mini-decoction step. Around 20 minutes into your main mash, remove roughly 3 litres of thick mash (mostly grain with minimal liquid) and heat it separately. Hold at around 72°C for 10 minutes, then bring to a gentle boil for a further 10 minutes, stirring regularly to avoid scorching. Return this portion to the main mash and continue as normal.
This process enhances melanoidin development, giving you deeper bread crust notes, a richer mouthfeel, and a more authentic malt profile without the time commitment of a full decoction mash.
