This mixed fermented saison aged for over 2 years in Sangiovese barrels is our first release from our barrel ageing program. Gentle aromas of honey blossom and orange creep out over the barnyard and acetic notes of this classic and complex sour. Contains Sediment

Mill Meadow from Burnt Mill Brewery is a refined barrel-aged mixed fermentation saison, combining rustic farmhouse character with bright acidity and gentle oak complexity. Aged patiently in barrels, this sour saison develops depth and nuance while maintaining the dryness and drinkability that define the style.

Layered yet vibrant, Mill Meadow balances citrus-led acidity, soft spice and subtle funk with delicate tannins from oak maturation. It’s a beer built for slow appreciation—complex, structured and beautifully integrated.

Flavour Profile

Taste: Lemon zest, green apple and light stone fruit with peppery saison spice and soft oak.
Mouthfeel: Light to medium-bodied, lively and finely carbonated.
Finish: Dry, tart and gently tannic with lingering farmhouse character.

Aroma

Bright citrus and orchard fruit lead, followed by white pepper, subtle earthy funk and hints of vanilla and oak from barrel ageing.

Brewing Process & Uniqueness

Mill Meadow is brewed as a traditional saison before undergoing mixed fermentation and extended barrel ageing. The use of oak barrels allows slow maturation, building complexity and subtle structure without overpowering the base beer.

Wild cultures and time create gentle acidity and nuanced funk, while the saison yeast contributes spice and dryness. Burnt Mill’s careful blending ensures balance remains central—producing a barrel-aged sour beer that is expressive yet refined.

About Burnt Mill Brewery

Based in Suffolk, Burnt Mill focus on brewing beers to a very high standard that are un-filtred and fresh. Owned by former home brewer Charles O’Reilly, Burnt Mill was founded in 2016 with a keen eye on quality and standards. Head Brewer Sophie de Ronde brought a wealth of brewing knowledge and talent. Between them and a fledgling team, they quickly established Burnt Mill as a brewery to be loved by beer fans around the country. Whilst Burnt Mill produce a wide range of styles, the major on all things West Coast. Bright, clean crisp Pales and IPAs are always main stage and form the foundation of their catalogue.
