ROUND PASTURE – BARREL AGED MIXED FERMENTED SOUR 5.8%

Round Pasture is named after a local farm field and is a bright and fresh sour with a gentle spritz on the tongue. The beer was fermented in Medoc barrels for just over 2 years and finished off with a small dry hop of Ella and Enigma. Flavours of elderflower, notes of peach skin and sherbet are in the forefront with a subtle after taste of barnyard funk. Fermented with Brettanomyces Lambicus, Claussenii and Trois

Round Pasture from Burnt Mill Brewery is a beautifully refined barrel-aged mixed fermentation sour beer, where time, wood and wild cultures shape depth and nuance. Aged patiently in oak barrels, this beer develops layered acidity, subtle funk and gentle oak character, delivering complexity without aggression.

Bright yet structured, Round Pasture balances tart citrus and orchard fruit notes with soft vanilla, light tannin and earthy undertones from barrel maturation. It’s a contemplative beer—designed for slow appreciation and sharing.

Flavour Profile

Taste: Lemon zest, green apple and light stone fruit layered with subtle oak, vanilla and delicate funk.
Mouthfeel: Light to medium-bodied, softly textured with lively carbonation.
Finish: Dry, tart and gently tannic with lingering complexity.

Aroma

Fresh citrus, orchard fruit and subtle farmhouse funk lead, followed by soft oak, vanilla and earthy barrel notes.

Brewing Process & Uniqueness

Round Pasture is brewed using a mixed fermentation approach, allowing multiple yeast and bacteria cultures to develop depth over time. After primary fermentation, the beer is aged in oak barrels, where slow maturation builds character, balance and natural acidity.

The oak contributes gentle tannins and rounded structure rather than heavy wood flavour, while the wild cultures create elegant funk and bright acidity. Burnt Mill’s precision ensures the beer remains harmonious—complex but not sharp, layered but highly drinkable.

About Burnt Mill Brewery

Based in Suffolk, Burnt Mill focus on brewing beers to a very high standard that are un-filtred and fresh. Owned by former home brewer Charles O’Reilly, Burnt Mill was founded in 2016 with a keen eye on quality and standards. Head Brewer Sophie de Ronde brought a wealth of brewing knowledge and talent. Between them and a fledgling team, they quickly established Burnt Mill as a brewery to be loved by beer fans around the country.
