In 2019 we had the pleasure of spending some time with The Bruery’s very own Sour Jesus, Jeremy. We shared some very special beers and brewed a beer of our own to put to rest in Châteauneuf-du-Pape barrels. The barrels were inoculated with a strain brought over by the Bruery to make this collaboration come alive. This beer has plenty of oak tannins, funk, and vinous characteristics to give you a tart and complex sour. Contains sediment.

Layered yet restrained, Twin Oaks offers bright citrus and orchard fruit notes supported by delicate funk and a clean, dry finish. It’s a beer built on nuance—complex without being overpowering, expressive without losing clarity.

Flavour Profile

Taste: Lemon zest, green apple and soft stone fruit with gentle acidity and light earthy undertones.
Mouthfeel: Light to medium-bodied, lively and softly textured.
Finish: Crisp, dry and refreshingly tart with lingering complexity.

Aroma

Fresh citrus and orchard fruit lead, followed by subtle farmhouse funk, light floral notes and a hint of earthy depth from mixed fermentation.

Brewing Process & Uniqueness

Twin Oaks is brewed using a mixed fermentation approach, combining traditional yeast and bacteria cultures to develop layered flavour over time. Extended conditioning allows acidity and funk to integrate naturally, resulting in a rounded, harmonious sour profile.

Rather than aggressive sharpness, the beer focuses on structure and balance—bright acidity supported by soft fruit expression and refined fermentation character. Burnt Mill’s attention to detail ensures clarity and drinkability remain at the forefront.

About Burnt Mill Brewery

Based in Suffolk, Burnt Mill focus on brewing beers to a very high standard that are un-filtred and fresh. Owned by former home brewer Charles O’Reilly, Burnt Mill was founded in 2016 with a keen eye on quality and standards. Head Brewer Sophie de Ronde brought a wealth of brewing knowledge and talent. Between them and a fledgling team, they quickly established Burnt Mill as a brewery to be loved by beer fans around the country. Whilst Burnt Mill produce a wide range of styles, the major on all things West Coast. Bright, clean crisp Pales and IPAs are always main stage and form the foundation of their catalogue.
