So in preparation for Christmas 2020 Jonny brewed up a Mince Pie inspired Big Belgian Dubbel. Packed with currants and raisins, with help from Jimmy from Unity Brewing. This classic Belgian beer is a great brew for anytime of the year, but super special for a Christmas/Winter treat.

BESTMALZ Pilsner (4000 grams)
Simpsons Munich Malt (2000 grams)
Dingemans Special B (1000 grams)
Weyermann® CaraMunich® type 1 (1000 grams)
Weyermann® Carafa Special® type 2 (100 grams)
Challenger Pellets (40 grams)
Belgian Candi Sugar Dark 500ml (1 packs)
Wyeast 3787 ABBEY STYLE HIGH GRAVITY.  (1 packs)

Additions and timing:

40g Challenger (boil)
125g Raisins (boil) – Not Included
125g Currants (boil) – Not Included
200g of Dark Candy Sugar – decant some of the boring wort in the last 10 minutes, then dissolve this in the wort and add back into the kettle.

Secondary additions and timing:

125g Raisins in rum (peak krausen) – Not Included
125g Currants in rum (peak krausen) – Not Included
(total 100ml rum) – Not Included

Yeast: Wyeast 3787 ABBEY STYLE HIGH
Fermentation temperature/steps: 18c for 3 days, then allow to free rise for 10 days

Brewing this beer…..

You will require 250g of currants and 250g of raisins, some good quality rum (roughly 100m) to add to this all grain recipe kit.

Jonny bottled his beer and primed the bottles using the remaining candy sugar.

The total grain bill for this brew is 8.3kg, so it is certainly not for the faint hearted and will push many all in one systems to their limits.

Note: The recipe kit is a revised recipe by Jonny after tasting the beer so don’t be surprised if the quantities in the video don’t match this kit.

    Great xmas beer – but you don’t need to use the whole grain bill. This will be tricky if you get it pre-crushed, but if you’re able to crush each malt seperatley you only need 70% of the grains. (I’m using a 35l Brewzilla)

    Brewfather agees, and I’ve brewed it and hit all the numbers with the reduced grain bill.

    Super tasty and boozy!
