Daft Cat Brewing x The Malt Miller – for BrewCon 2021 we asked Sarah Pantry, award winning home brewer, BJCP judge, and all round lovely person that is a bit obsessed with stouts and dark beers to develop a beer for us. As well as then brewing this recipe for us to serve up at BrewCon she kindly shared the recipe so that you can brew this at home.

Of course the recipe that Sarah came up with was for a stout. Smooth and lightly creamy this oatmeal stout with hints of light roasted coffee from the roasted malts which you can both smell and taste. A refreshing easy drinking stout which isn’t as dry as an Irish stout or as roasty and robust as foreign or imperial stouts

Crisp Chevallier Heritage Malt
Crisp Crystal 240 (Dark) Malt
Dingemans De-Husked Roast Barley
Thomas Fawcett – Oat Malt

Crisp Low Colour Chocolate Malt

Total Grain Bill 4750g (excluding husks)
Oat Husks (500 grams)

East Kent Goldings ( GOLDINGS ) Pellets (43 grams)
WLP013 London Ale Yeast (1 packs)

    Mine finished slightly high at 1020 (FG 4%). On tasting, it needed something more so I added a 1/4 tsp instant coffee to each bottle. The result is an easy drinking stout with the extra sweetness balanced with the bitter coffee. I’ll make this again as I feel it is worthy of another go.

    Finished high at 1.019 at the lower end of the attenuation on the wlp013 yeast. However fabulously tasty with plenty of flavour and a lovey creamy head and without having a ridiculous ABV like many porters and stouts seem to have. Definitely one to brew again with some added yeast nutrient next time.
