This is the classic Hefeweizen yeast for producing German wheat beers. Banana ester production can be increased by underpitching and producing a glucose-rich wort.
Escarpment Yeast Weizen I is a traditional German wheat beer yeast strain designed for brewing authentic Hefeweizen, Dunkelweizen and Weizenbock styles. This classic Weissbier yeast produces the iconic balance of banana esters and clove phenolics that define Bavarian wheat beers.
Highly expressive and deliberately low-flocculating, Weizen I remains in suspension during fermentation, contributing to the characteristic haze, soft mouthfeel and yeast-driven aroma expected in German wheat beers.
By adjusting fermentation temperature and pitching rate, brewers can shape the final profile – warmer fermentations enhance banana and bubblegum notes, while cooler temperatures emphasise clove, spice and subtle phenolics.

Founders Angus Ross, Nate Ferguson, and Richard Preiss met while working in a yeast research lab at the University of Guelph. A collective love for beer and brewing led them to founding Escarpment Laboratories, with the goal of adding value to the craft beverage landscape, and getting to hang out in breweries for a living. Since 2015, Escarpment Laboratories have helped hundreds of breweries achieve their fermentation targets.
We were brewers first. Our founders and many staff come from a brewing background. We know how brewing works, all the way from resetting a mash bed to repitching a yeast culture.
