This recipe was provided for the book from a professional brewer, all of the recipes were scaled by the writers to a 20ltr batch size using 75% efficiency.
Where ever possible we have matched the exact ingredients, however in some recipes slight changes may be required and volume adjustments based on ingredient available to homebrewers. Be sure to fully read the below details before purchasing so you are fully confident in the process and aware of any ingredients which are not included with this kit that you will need to add.

The recipe in the book says Midnight Wheat can be substituted for Fawcett’s Roasted Wheat and Crystal 75 can be substituted for Simpsons Crystal Medium Dark which is what we have done on this recipe.

Mash notes: Water: Firestone Walker’s brewing liquor is RO filtered then treated to reach a 2:1 ratio of sulphate to chloride at 80 ppm total calcium. They target a mash pH of 5.4 and use phosphoric if any adjustment is required

Yeast: NOT INCLUDED – recommended White Labs PurePitch® WLP002 English Ale
Fermentation temperature/steps: Pitch one pack (70ml) White Labs PurePitch® WLP002 English Ale at 19°C/66°F and ferment at 20°C/68°F until terminal gravity is reached.
Yeast selection may be something fun to experiment with here. Firestone Walker explained that – “our house yeast is an English strain similar to WLP 002 but it attenuates more and is more banana heavy, so maybe another strain is a better fit. I definitely think it gives our beers a distinct profile compared to say US-05 or WLP 001 but those yeasts would also make a fine beer, if not exactly Wookey.”

Dry hops are added when fermentation is nearing final gravity and Firestone Walker rouses them the day after adding.

Firestone Walker – Wookey Jack Black Rye IPA
Born in a shed in the family vineyard in 1996, Firestone Walker is a California (Paso Robles) beer company that was founded by two brothers-in-law, Adam Firestone and David Walker. Their search for a decent local ale proved futile, and it wasn’t long before they had goaded themselves into brewing their own. Their initial brewing efforts were made in a second-hand brewhouse with converted wine making equipment – mostly with mixed results. But the hook was set when their first recipe for Double Barrel Ale was attempted.
Their Wookey Jack Black Rye IPA is something of a cult classic and a personal favourite of Andy’s! You can expect big toasty malted rye flavours and complex textures with a refined bitter finish, creating a “defiantly different experience for dark beer and IPA fans alike” according to their tasting notes. A three-time gold medal winner at the Great American Beer Festival, this beer is gnarly on the outside, yet refined on the inside.
The recipe kindly provided by the brewing team at Firestone Walker for this book is the modern Propagator recipe which won gold in the American Black Ale category at the GABF in 2020. This is very similar to the recipe brewed at the main brewery from 2012-2016 but has a higher dry hopping rate and has been tweaked slightly to get it to attenuate properly on a smaller system.
