Description
Dusty Records – New England Style Pale Ale – 5l All Grain Home Brew Kit
This 5 litre recipe kit features everything you need to home brew a homage to one of our most favourite recipe kits launched in the last 12 months, DEYA – Dust My Broom Pale Ale, but tailored to work perfectly as part of our Kitchen Brewer series or otherwise known as stove top brewing.
Expect a beer that’s dank, juicy, grape-fruity and delicious, jam packed with hop presence from the high quality of Simcoe and Strata hops used in the whirlpool and dry hop. This 5L recipe kit is inspired by our DEYA Brewing – Dust My Broom Pale Ale – 23l All-Grain Recipe Kit which has a been super popular since we visited DEYA and filmed a video about this recipe and the mighty DEYA brewery in Cheltenham.
This is a more technically challenging brew which involves a big whirlpool and dry hop stage, also we suggest that this beer be kegged and if possible fermented in a low oxygen environment and is a great candidate for fermenting and serving from Oxebar Kegs. To learn more on this process take a look at this video where we ferment and serve directly from Oxebar kegs and use them as mini pressure fermenters.
Water Chemistry plays a big part in the finished profile of this beer style, if you are confident in this area then aim for a strong 2:1 ratio of Chloride to Sulphate – if you are not versed in this area then we suggest you buy a couple of bottles of mineral water, such as Tesco Ashbeck, and use this for brewing with rather than your tap water.
Check out the video instructions or our step by step blog post to guide you from brew day to bottle!

THE MASH
Temperature °C (Step 1): 70
Length (mins) (Step 1): 60
Mash notes: Add 8.2L total strike water to your kettle and heat to 72c, once you add the grain the temperature will drop and you may need to turn on your heat source again to bring back to the target of 70c. Maintain this temperature for the whole hour of mashing.
THE BOIL
Boil time (mins): 30
Hop / kettle additions and timing:Add 5g Chinook @ 30mins
Whirlpool / hop stand:After the boil, cool to 80c and add:
35g Simcoe & 5g Chinook – stir well and leave to stand for 30mins before cooling fully and transferring to your fermenter
Yeast: WHC Saturated
Fermentation temperature/steps: 18-20c – 7-10 days until fermentation has completed, raise the temperature if possible or ensure you leave the beer for 48 hours after fermentation has finished before moving on as this will help reduce the risk of Diacety. After this, if possible cool to 12-16c and add dry hop dose to your fermenter.
Secondary additions:Leave in contact with dry hops for three days before cold crashing to 4c for 48 hours and packaging, taking care to not introduce oxygen into the finished beer as this will result in an oxidised end beer
