Oktoberfest Fester All Grain Recipe Kit
This All Grain Recipe Kit is for Rakey’s Home Brew Festbier as part of our Seasonal Brewing Series on YouTube. To prepare for this years Oktoberfest, Rob, Stiffo and Rakey all decided they wanted to brew beers at the traditionally correct time of year which then allows the beer to age in cold conditions for a period of 6 months before drinking in September and October. Rakey chose to brew a Festbier, as he has done version of this recipe at this time of year since 2021. In simple terms this is a ramped up version of Helles. Its light in colour, malty and bready, crisp and refreshing to drink.
Please note, yeast is optional in this recipe allowing you to choose a yeast or method of yeast prorogation that suits your style of brewing.

Hop / kettle additions and timing:
60g Hallertau Mittelfruh @ 60 mins
40g Hallertau Mittelfruh @ 10 mins
Yeast: OYL-107 Oktoberfest (Optional – NOT INCLUDED)
Fermentation temperature/steps: Pitch yeast at 7c for 7 days, raise to 10c for 7 days, raised to 12c for 7 days – check for FG, if achieved slowly reduce temp 2c each day down to 4c for lagering for a minimum of 3 weeks.
Comments:
The recipe in the video was brewed to a 23ltrs batch for a more sessional strength in 2024, after having previous versions have also been done to 19ltrs for a 5.2% abv which was also a great drinking beer to mark the festivities of Oktoberfest!!
For the true Oktoberfest experience this beer should be brewed before the end of March and the stored in a cold cave until drinking in September. However we know that not everyone has cold cave that they can use for 6 months, and possibly the patience to wait that long to drink a beer. But we would recommend that you give this beer plenty of time to ferment and condition, temperature and time are the main tools you need to brew a great Oktoberfest beer.
In the video you will see that a G40 was used to brew this recipe, but it would work on most home brewing systems. Also to save time 2 packets of Omega OYL-107 were used, we have decided to make these optional on this kit as you may wish to choose a different yeast or choose to buy one packet and then build a starter, the choice is yours.
