Description

One of the original craft beer pioneers, Sierra Nevada Brewing Co, founded by Ken Grossman, have been going since 1980. Brewing equipment wasn’t easily available in the early days and Grossman had to retrofit used dairy equipment to form his first brewhouse; a lot has changed since then! Sierra Nevada Brewing Co. arguably kicked off the entire craft beer movement with the release of their, still to this day, seminal Pale Ale. Since then they have been pumping out some of the best beers American has to offer and they still do! If you’re after hop forward beers with class and distinction Sierra Nevada is the way to go!

Crisp Best (Pale) Ale Malt (6000 grams)
Crystal T90 Pellets (56 grams)
Magnum Pellets (98 grams)
Citra Pellets (14 grams)
WLP001 Californian Ale Yeast  (1 packs)

Fermentation temperature/steps: follow yeast guide 18-20c until FG

Mash grains at 155 °F for 90 minutes.
Raise mash temperature to 170 °F, hold for 5 minutes, then recirculate.
Run off wort and sparge with water hot enough to keep the grain bed around 172 °F.
Boil time is 70 minutes. Follow hopping schedule above.
Cool wort to 68 °F and pitch with California ale yeast, AKA Chico ale yeast.
After primary fermentation (1-2 days) add dry hop schedule to a Randall or directly to the fermenter.
Open another Torpedo, and wait until ending gravity is 3.7 °Plato.
Bottle or keg.
