Brewing Process & Uniqueness

The Kernel’s Bière de Saison range is fermented using a complex house mixed culture. This includes multiple saison yeast strains alongside wild yeast and bacteria, including Brettanomyces isolated from the brewery’s barrels, wild yeast collected from fruit and a combination of Lactobacillus and Pediococcus strains.

After the primary saison fermentation, the beer undergoes an extended secondary fermentation where the wild cultures develop additional acidity, spice and complexity. Raspberries are added to the base saison, contributing vibrant fruit character and natural tartness that integrates with the beer’s mixed fermentation profile.

As the beer matures, Brettanomyces can add further depth with subtle spice, fruit complexity and gentle earthy character. The result is a layered farmhouse beer that evolves beautifully over time.
