This recipe was provided for the book from a professional brewer, all of the recipes were scaled by the writers to a 20ltr batch size using 75% efficiency.
Where ever possible we have matched the exact ingredients, however in some recipes slight changes may be required and volume adjustments based on ingredient available to homebrewers. Mash notes: Target Water Profile: Manchester water is pretty soft and Track builds the profile up to aim for an overall ion makeup of 98ppm calcium, 165ppm chloride, 7.5ppm magnesium, 22ppm sodium and 88ppm sulphate. This helps keep the dark malt profile in check, allowing the hops to sit nicely alongside. Target mash pH is 5.3.

Fermentation temperature/steps: Pitch one pack (11g/0.38oz) of Lallemand LALBREW® Verdant IPA yeast, one pack (11g/0.38oz) of WHC Labs Saturated or one pack (70ml) White Labs PurePitch® WLP066 London Fog at 18°C/64°F allowing to free rise to 21°C/70°F after 5 days.
Secondary additions:
Dry hop (at terminal gravity)
Cascade 40g/1.41oz
Centennial 40g/1.41oz
Track adds dry hops at ambient temperature post fermentation, so 18°C/64°F – 21°C/70°F. Hops are dropped after 48 hours as the beer is crashed to 0°C/32°F and held for 7 days.

In 2008, Track Brewing Co founder Sam Dyson embarked on a bike ride that, you could say, got out of hand… turning into a two year odyssey that took him around the world. His journey began with a coast-to-coast adventure across the United States, where he stumbled upon small taprooms and breweries that left an indelible mark. Upon returning home, Sam delved headfirst into the world of beer, honing his craft in London before returning home to the North West, and nestled in an arch beneath Piccadilly Train Station in Manchester, Track was born. From those early experiences in the taprooms across American dirt roads, the dream had always been to create a space where production and consumption could sit side by side, allowing the drinker to be transported into the sights and smells of a working brewery, whilst being able to try the beer as fresh as possible. Track’s tap room delivers just that and is a must visit in Manchester!
Head Brew Matt Dutton designed Cowboy Town, Track’s first American Brown Ale, to be smooth with a slight caramel sweetness and a solid malt backbone, which combined with a classic trio of c-hops hits all of the right spots they love about this style. Cowboy Town makes for incredibly easy drinking in all formats but it really pops when on cask dispense as the beautiful toasty malts and light citrus hops meld together to form a perfect example of this classic American style.

Fantastic recipe, underrated beer style. Went with the Verdant yeast. 10/10 would brew again.
