Total Grain Bill 4960g
Citra Pellets (230 grams)
Idaho 7 Pellets (69 grams)
Wyeast 1318 London Ale III.

THE BOIL
Boil time (mins): 60 minutes
Additions and timing:
After the boil reduce temp to 77c.
Add the following and whirlpool:
46g Citra
23g Idaho 7
You want 25min of contact time, so you might wish to include the time it takes you to chill your wort and reduce this down based on your own expiences.
Secondary additions and timing:
You can adjust the process according to your equipment and experience, but our process would be the following:
Once fermentation reaches FG reduce temp to 15c, we would typically dump out some of the yeast cake at this point but this will depend on your equipment and not essential, it prevents yeast absorbing hop oils.
Then dry hop for 2 days contact time.

46g Idaho 7
Rousing hops will aid flavour being absorbed, but you will need to also allow them to settle out so you can dump them after 2 days of contact.
Cold crash, then package your beer.
Yeast: London Ale III
Fermentation temperature/steps: Ferment at 19c for typically 7 days, but check with hydrometer.

Excellent recipe. Dry hopped using fermzilla hop bong and closed transfer to keg, carbonated for a week and it’s a beautiful colour, aroma, mouthfeel and taste!
