Midwestern Ale yeast is a single strain of Saccharomyces cerevisiae isolated from a storied brewery in the heartland of America that consistently wins best beer with its famous IPA, well suited for fermentation of a broad spectrum of worts.
A relatively fast fermenter with good attenuation and pleasant mixed citrus ester profile that can be tuned via the fermentation temperature, this yeast is great for any porter, stout, brown, amber, IPA, pale ale, or American wheat beer.
Expect this yeast to ferment cleaner with a low ester profile at the cooler fermentation temperatures, and produce a more pronounced ester profile at warmer fermentation temperatures.

Nick has had a long time love of homebrewing, and has always enjoyed experimenting with new ingredients and techniques to evolve and improve his recipes. As a biological scientist, Nick took a particular interest in the organisms that convert the wort he brews into the beer he serves. Specifically, an interest in the vast number of strains that were not commercially available to homebrewers in pure culture.
Putting to work a formal education in microbiology and chemistry, Nick began to isolate, characterize and bank a vast collection of unique yeast and bacteria from every source he could find. As he did this, something dawned on him: a high impact contribution to the brewing community would be to make these novel strains and blends available to homebrewers and craft brewers around the world. At that moment the seed was planted, and after many months of plating and colony selection, sore microscope eyes, test fermentations and entrepreneurial research, The Yeast Bay was born!
Nick holds a BS in Biology (Molecular/Microbiology emphasis) with a Chemistry minor from University of Wisconsin-Stevens Point and a MS in Biomedical Engineering (Biomaterials) from University of Wisconsin-Madison, and puts his education to use on a daily basis isolating and characterizing new microbes.

While Nick will head up isolation and characterization of new strains of yeast and bacteria, we are partnering with an industry leader to manufacture the necessary quantities of these organisms for commercial sale. Once Nick identifies an organism as a candidate for one of The Yeast Bay’s offerings, the good people at White Labs will bank, propagate and package the organism for sale as high quality liquid culture.

Our goal in creating PurePitch® Next Generation for Homebrewers was to provide a product that will allow hobbyists and small scale brewers a convenient and modular package to pitch a consistent 7.5 million cells/mL; a commercially recommended pitching rate for standard ale ranges. The same package has proven to be an optimization to PurePitch® for larger professional brewers for over a year.

Is PurePitch® Next Generation larger than your previous package?
Yes! Now with more yeast, you get double the pitch. PurePitch® Next Generation is designed to pitch at a rate of 7.5 million cells/mL per 5 gallons/20 liters, a commercially recommended pitching rate for standard ale ranges.
Do I need to make a starter?
No! For any standard ale, you will get the perfect fermentation by pitching directly – NO STARTER NEEDED.
What if I am brewing something that is not a “standard ale” – how do I know how much yeast I need for my batch?
Each pouch of PurePitch® Next Generation provides general quantity recommendations per 5gal/20L of wort.
Our online calculator at yeastman.com allows you to see the exact recommendation for you using your volume, temperature, and gravity. Allowing you to customize the pitch rate to anything you want, larger or smaller!
What does 7.5 million cells/mL mean?
When pitching 1 pouch of PurePitch® Next Generation into 5 gal/20L of wort, there will be 7.5 million cells per milliliter. This is a commercially recommended pitching rate, allowing you to pitch like the pros.
What is the shelf-life of PurePitch® Next Generation?
The shelf-life is 6 months from the QC-release date labeled on the package. As a result of the proprietary dual-layer film, yeast are able to remain in excellent condition with high viability and performance.
